When churning people get up early in the morning in summer, before the day gets warm as the butter would be soft, cold water is added to it to keep it cool. And in winter hot water is added to it to warm the milk so that the butter would come on, when the butter begins to appear they say the milk is broken. There is a piece of hollowed wood with a hole in it around the churn dash to keep the milk from oozing out when churning, this is called the coppan.
