- (ar lean ón leathanach roimhe)Luke warm is used in Summer to help to churn. Cold water is put in the churning when it is done to gather the butter. When butter is gathered it is lifted out with the hands and put on a trencher. It is washed well with water, all flaws are removed, it is mixed well and salted to suit. When ready it is made up into rolls with butter clappers. The buttermilk is used for calves, pigs, bread making and drinking.
