Ar an leathanach seo

When it is finished the butter can be seen floating on the top. Boiling water is often added during the process. If too much water is added it is spoiled and the butter is colourless. The water is added to bring on the butter and the cream must be sixty nine degrees in Winter and fifty in Summer to bring on the butter.
When the churn is finished it is left for a few minutes to settles. The house-wife takes the butter off with spades and puts it on a wooden dish called a trencher. Then it is salted and put into bars or prints. There are local sayings connected with churning and butter-making.
