In olden times oat meal bread, boxty and potato bread were the principal bread made in this country.
bread was made from the corn grown locally. The was no flour made in the district because the was no wheat grown. Boxty-bread was made by grating raw potatoes and sometimes flour was used. Boiled potatoes mashed and mixed with a small quantity of flour or sometimes oat meal was used in making Potato-bread, but there was never any milk used. Bread was made twice a week were the family was small, and were there was large families the made a cake every night.
The vessel in which they baked the bread was known as a pot-oven, but the oat-meal bread was baked in front of standing against a griddle. This griddle was made of iron. There was pancakes and special bread made at Christmas, Hollow Eve and Shrove.- Bailitheoir
