- (continued from previous page)month after they've been sown the young stalks are visible. The potatoes must be sprayed twice every year. If not, you generally have a bad crop. They are sprayed around here by a machine drawn by horse. It takes a lot of time to dig them when they are in ridges. It is very easy to dig them when in drills. They must be dug by spade when in ridges but when in drills they can be dug by a digger or a plough. When the potatoes are dug they are not immediately taken home. They are left in pits in the middle of the fields. They are left there for a long time. They are covered well with rushes and ferns to save them from the frost and from the crows who sometimes do great harm to the crop.
There are many different varieties such as Kerrs Pinks; Aran Banners; Epicures; Golden Wonders; Abundants; British Queens; Irish Queens; Champions; Skerries and many others besides. The early varieties are the Epicures, Abundants and the British Queens. Of these the Epicures and British Queens are best.(continues on next page)
