- (continued from previous page)Butter is taken out in a wooden-dish and butter-spade. The dish, spade, woman’s hands and arms are then scalded and rinsed with cold water. The butter is then lifted out with the hand or the spade into the dish. It is the washed and worked with cold spring water. Then it is salted and washed with cold spring water and clapped about again. It is then left in the dish with water until it is fairly firm. It is weighed and clapped into rolls; it is then ready for use. In the summer it is harder to get firm than in the winter.
