    dish and a knife is put through it to take any hairs or motes out of it. It is weighed out in pounds or half-pounds. The scales that it is weighed with are made at home. Two square pieces of board identicaly the same size, and a piece of stick about one foot and a half and about two yards of string are got to make the scales.
    The churning is mostly done with a churn staff.
