    in summer it takes a quarter of an hour and in winter a half an hour or so. Cold water is put in the churn in summer to cool the cream and in winter hot water to warm it.
    We churn by hand and the dash goes round about inside. We know when it is churned because it gets hard to twist the handle. The butter is taken out with two butter bats and it is put into a dish and it is washed until every sign of the butter milk if left it. It is then made up in rolls.
