    The potatoes are usually picked by the children of the house. This is not an easy job, as they have to be sorted. Some farmers pit their potatoes out in the field where they were sown, others draw them into the haggard as soon as they are dug. Here they are pitted and covered with 'scraws' and clay.
    Coming on to the Spring of the year before the slits are cut, the potatoes are looked through and turned, and any bad ones that are in amongst them are taken out and cast away.
