- (continued from previous page)grater was made out of a piece of tin which was put down on a soft sod, and holes were made on it with an awl or with a good strong nail. The tin was then tacked on to a piece of board.
The grated potatoes were then squeezed in a linen cloth. The cloth was finally squeezed between the hand and the edge of the table. Then the squeezed potatoes were mixed with a little pinch of flour and wet with cream. It was then baked on a very hot griddle, and eaten fairly hot with butter. It was beautiful.
Potato-cake. This was made rather often. The potatoes were boiled and mashed and mixed with flour and a pinch of salt. It was wet with milk, sometimes with cream. It was a special treat for visitors.
Wheaten bread was made from home-grown wheat. The wheat was ground in querns at home. In other places or after the time of the querns it was taken to Counihan's mill in Ballinorig, Causeway.
The marks put on top of the bread were usually crosses.
