Water Cress:- The difficulty in regard to the use of water cress lies in the danger of typhus obtained from cress taken from a stagnant pool.
It should therefore be washed four or five times, in different water each time - if taken raw.
The recipe I give below obviated all danger and will ensure an adequate supply all the year round.
Gather the cress in running water and wash.
Fill a pot with clean spring water and fill in the leaves.
After half an hour remove from the fire and strain and bottle.
A glass of this taken each morn on an empty stomach cuts away phlegm and is good for bronchitis and asthma.
The late Rev. J. Bradley P.P. Carrigallen that whenever he suffered from an upset stomach a meal of cress only invariably left him right again.
Very tasty sandwiches can be ade from cress and it is also a good pick-me-up in the case of a person over indulging in alcohol.
