    There were many kinds of bread made, Potato bread, Boxty and Oat meal bread. The Boxty was made in the following way. First the potatoes were washed clean and peeled. Next they were grated with an iron called a grater. Afterwards they were put in a clean cloth and all the starch squeezed out of them. This done they were put into a basin and some flour put in also and they were mixed up together until it was made into a cake. Then they used to put it into ovens and it was baked in twenty minutes. There was never any water or milk used
    They used to make the bread every day except the Oat meal bread. They used to make enough of Oat meal bread on Monday that would do them for a week. there was a mark cut in the middle of the cake and another cut down across the first cut as the people said it would make the cake bake quicker.
