    There was a starch factory in this county in Graigue na Managh owned by the Murphy Family (Privately) and when first established it was potatoes were used to produce the starch later on rice was imported to make starch as we now know it.
    The factory is not now (1938) working but the building is still extant.
    Murphy the starch man as we knew him is dead (R.I.P.) but his brother is now Parish Priest of Borris of Co. Carlow. He too had the factory instinct as he started and financed a tile factory for roofs in this village or Borris also.
    The potatoe is now to be used to produce alcohol or petrol in Co. Louth and in other places
