  1. The bread which I am going to describe was made in the townland of Basllylehane in the parish of Arles.
    Griddle - Cake
    The same amount of flour for the griddle cake was used as in an ordinary cake. Then bread - soda and salt were added to the flour. Then buttermilk was added. Griddle cakes were baked on a griddle. A griddle is like a pan except that is has no handles or sides.
    Potato Cake
    Potato - Cakes were made from potatoes and salt and bread - soda and a small amount of flour. The potatoes were cut up very small. They were mixed with buttermilk. The potato - cakes were baked in a pot. Bread was not used very much in olden times because porridge and potatoes
