- The kind of bread that was used in this district in the olden times was, wheaten bread, oatmeal bread, potato cake, and sometimes stampy and boxtey bread. The flour was made in the district, the wheat was grown there, and ground in a quern. The quern or grinder stones are still to be seen in the district.
The wheaten bread was made from home grown and ground wheat butter milk was used at its kneading and it was baked in a bastable. It was of a dark colour but was very healthy food.
The oatmeal bread was made from home grown wheat and oats, ground in a quern, they were mixed together. Flummery was used at its kneading, this(continues on next page)- Collector
