    There is a cover on this hole fitted with a rubber washer. There is another hole to leave out the gas. The handle for twisting is at one end and at the other end there is a glass so that you could look in to the barrel when necessary.
    When the butter was made they made it up together with special pieces of timber called "butter spades". When the butter is rolled together it is covered with a clean white cloth. It is put in to boxes called "firkins" but at present it is put into "keelers". These "keelers" are wooden tubs about 6 inches deep.
