    puts the cream in through a hole in the centre of the "barrel" and puts the "cover" on the hole. Then she twists the handle with her hands. She usually makes the churn in half an hour. There is a little glass on the side of the "barrel" and when that is clear the butter is made.
    The buttermilk is then taken out and the butter is washed. Then it is taken out of the "barrel" and washed again. Then the water is beaten out of the butter, and a sufficient amount is kept for household purposes and the remainder is sold to some shop-keeper in Cluin. The buttermilk is given to the pigs or to the calves. If a person came into the house while the "churn" is being made, he would not be left out until he twisted the handle of the churn, as the butter could not be made from the cream. A person would not be left bring a light out of the house if a churn was being made in it as the butter could not be made from the cream.
