- (continued from previous page)Lancers, and Yankee Learys. Yankee Leary potatoes are one of the most popular grown in this district. They were first bought to this district from America, by a man named Leary.
The women of this district make two kinds of cakes from potatoes, called potato cakes and 'stampy.'
Potato cakes are made from a mixture of flour, boiled potatoes, and milk. This mixture is baked in a pan over the fire.
'Stampy' is made in the following manner. Raw potatoes are first grated, and the water is then squeezed out of them. Flour and cream are then mixed with the grated potatoes, and this mixture is baked.
