  1. Boxty bread was devised in the time of the famine. It was devised to make the share of flour the people had last longer, because they had not much flour at that time.
    This is the way boxty bread was made. Eight fairly large potatoes were got ; they were not peeled but the eyes were taken off and they were cleaned and scraped.
