    Blood puddings were made of the large puddings of the pig or cow. These were first washed and turned several times. They were then filled with blood. (The blood was kept fresh from the animal by the addition of a little salt). To this blood was added oat meal to make it thick, chopped onions, pepper, salt, and if liked ginger.
    The pudding was tied at one end, then the blood was poured into the pudding with a jug
