- (continued from previous page)buttermilk. Then add more cold water & shake well to wash off the buttermilk & wash thus three or four times till rinsing water was clear. Then turn out butter on a dish, add salt & with two pieces of "lats" (flat boards planed) mix the salt through it & make it into a roll.
Very little churning is done in this locality now - adays, on account of the number of creameries, but those who do a little & sell some, find that it is much more profitable than sending milk to the Creamery & in addition if they need it, they have a drop of young cream at all times, splendid buttermilk to drink, to make bread of or to use as cosmetic, for removing wrinkles & freckles & preventing sunburn.
I. (B. Shine. P. Teacher in Glenbrohane S. Knocklong, Barony of Coshlea) have a churn & we make our own butter. When the cows are milked, we set the milk in pans very well scalded & cooled. Every third meal of milk is skimmed, i.e. Monday morning's setting would not be skimmed till Tuesday morning, & so on. This we put into a large enamel bucket, &(continues on next page)
