- Mrs. James Doyle of Cullina always makes her own starch from potatoes.
This is the recipe which I got from her:-
1. Wash and peel the potatoes.
2. Then grate them into pulp.
3. Now put the pulp through a strainer left into a bucket of clean water. The starch sinks to the bottom of the water.
4. Drain away that water and add another bucket of water and mix the starch through it.
5. Let it lodge again and drain off the water.
6. Do this several times until the starch becomes pure white.
7. Put in a pan and leave in the sun to dry. She gave me a sample of the starch which was very white and was in small irregular lumps.
When her children her in the laundry Class in this school she sent some of this starch to the teacher. It was used and found to be very good.- Collector
