    that are dug about a foot deep on the ground. The potatoes which we sow locally are the Goldenwonders the Champion Kerrpink Aranbanner. The Champion grows best in this district. In olden days the people made starch from potatoes. The raw potato is pulverized by means of a grater. This pulp is left standing for a time when it forms into a clammy liquid substance. Then it is put into a muslin bag squeezed thoroughly until all the water comes off. This liquid is the starch in a raw state.
