    The potatoes are ploughed out and gathered and put in pits in the field. The pits are first covered with rushes or straw, then with clay and an outside covering of the withered stalks. After a time they are picked and taken into the haggard and stored for the winter.
    Starch used to be manufactured from poatatoes. The potato was grated into a vessel, hot water was poured on it and the water was stirred until the starch was made.
