- Long ago the principal bread was boxty bread and oaten bread. The boxty bread was made of potatoes. There was a great amount of potatoes cooked for the dinner and the ones that would be left would be kept safely until evening. This bread was baked at night-time because it took a very long time to bake it.
Oaten bread was sometimes baked on griddles. This bread was generally called "griddle-squares." When it was baked it was cut in slices and butter and water-cress put between them. There were large pancakes baked on griddles for special occasions. There was often a plain potato cake made for the evening tea. Potato cakes are still made in some parts of the country.
The bread was made in the form of a square and baked on a board in the shape of a half-circle. This was called a "briezy" in olden times. The bread was kept in a large wooden box which was called a "bin." These large boxes are still kept in some houses.- Collector
