- In olden times people made different kinds of bread which are seldom used nowadays. They had also very different ways for taking it. In those days there were no baking ovens and very few pans so the baking was nearly all done on griddles. Boxty, oat bread and potato bread were the usual kinds eaten. The boxty was made of raw potatoes and flour. The potatoes were peeled and washed clean. Then they were grated into a pulp. Next the pulp was rolled in muslin or some other fine cloth and the water pressed out of it until it was very dry. Then it was mixed with two or three boiled potatoes, flour and salt were added. The mixture was then shaped into a cake and baked on the griddle.
The oat bread consisted of oat meal, salt and buttermilk mixed and shaped into a cake. It was usually baked before the fire.
Pancakes were made on Shrove Tuesday.- Collector
