scarce oaten seeds were steeped in cold water over night, and the liquid used instead of milk. The people then made "sowans" by steeping oaten seeds for a week in cold water, straining it at the end of a week, and then boiling it in a pot over the fire, taking good care to keep stirring it in the same direction. If stirred in opposite direction it would not thicken. Salt was added to it according to taste.
