A trench about a foot deep is left all around.
This is there because some clay has to be shovelled up to secure the top of the pit.
Aaron Banners, Kerr's Pinks, Arran Chiefs, Easter Weeks, British Queen's, Up to Dates, Suttons, Shamrocks, Golden Wonders, Champions, Arran Victors and Arran Consuls are some of the potatoes grown.
Suttons have gone out of date and Shamrocks and Arran Consuls have nearly gone out of date.
The Beauties of Heyborn are a very early variety and are nearly gone out of date also.
An old saying is "Dig them in June or they'll bust the drills."
Potatoes were used once as a substitute for starch but I cannot find any account of this locally.
