  1. Starch long ago was made of potatoes. The potatoes were washed clean and dried on a seive or basket. Then they were grated with a grater into a crock the grated potatoes were put into a cloth and rung tightly. Then they were put into a vessel. The coloured water was let settle for three hours and the water that was on top was drained off and the white starch remained.
