- Bread The kinds of bread used in my district long ago was oaten - bread, boxty - bread, potato - bread, and bread made from rye mixed with a small quantity of flour.The wheat and oats and rye were grown in this district long ago. It was brought to the mill and it was ground into meal. The oaten - bread was made from the oaten - meal that was made from the oats. The wheat was ground into "whole meal" in the local mills. This made brown - bread. There is no account in this district that these querns [?] or grindstones had been used in the district. The potato bread was made from potatoes. Flour in very small quantities and some salt were used. Some added a little new milk in kneading it. Boxty bread was made from raw potatoes cleaned thoroughly. These were grated into pulp. This pulp was put into a linen bag and the water all squeezed from it. Then a quantity of mashed potatoes, flour, and some salt were added. It was kneaded well with the hands into a cake. It was then baked in an oven or pan. Sometimes it was boiled when the cakes were called dumplings. A quantity of oaten meal and a little sugar and sometimes caraway was put in the oaten cake.
