- Churning
When the cow is milked the milk is strained in order to remove any dust or hairs that may be in it. It is then left in the dairy in a shallow vessel to set, care being taken that no strong smelling substance such as onions and Paraffin oil is left nearby as butter and milk are very tainted. All vessels connected with milk and butter must also be kept scrupulously clean.
When mother has sufficient cream gathered she puts it into the churn, puts the dash and lid on and then puts the claibín[?] over the lid, to prevent the milk from splashing out.
