- (ar lean ón leathanach roimhe)covered with clay. They are left in those dry pits for the winter. In February, the cover is taken off and the potatoes carefully turned to prevent growth. This turning is done three or four times during the year to keep the potatoes good. Boxty is made from potatoes. The potatoes are washed, scraped with a scraper into a pulp. This pulp is put in to a clean dry cloth and squeeze. It is then mixed with flour and salt and made into a cake. This cake is baked on the frying pan and eaten hot with fresh butter. It is a very strong form of bread.
