When the milk is churned about twenty minutes the butter begins to appear first in a very fine crumbly shape then these fine particles adhere and gradually work into a soft mass, then the churning is finished.
The quality of the butter largely depends on how the milk is gathered. It is some times in a wooden vessel called "butt" and in earthen-ware vessel is best, either of these must be kept very clean. Each milking is run into this vessel through a very fine strainer and in three or four days it is ready for churning. The butter when churned is quite soft and must be allowed to cool as the milk(leanann ar an chéad leathanach eile)
