When the milk is churned about twenty minutes the butter begins to appear first in a very fine crumbly shape then these fine particles adhere and gradually work into a soft mass, then the churning is finished.
The quality of the butter largely depends on how the milk is gathered. It is some times in a wooden vessel called "butt" and in earthen-ware vessel is best, either of these must be kept very clean. Each milking is run into this vessel through a very fine strainer and in three or four days it is ready for churning.
