  2. Early potatoes were best for starch making as they were rich in starch. Starch was made mostly in July when the potatoes were starchy. What came through the linen bag was let drop into a clean basin. A little water was added and also some blue from the shop. This liquid was left out in the sun to dry. When dry it became hard and white. It was then lifted from the basin and placed
