When the churning is started boiling water is added to help to raise the temperature. Long ago when ther were no creameries the people churned the milk themselves and sold it at a very big price, but those who could made very good butter brought it to Sligo to the show and got prizes and then the people that was at the head of the show bought it at a very good price.
