- (ar lean ón leathanach roimhe)the churn staff there was a circular piece of wood with holes in it. The churn staff was worked up and down and the circular piece of wood beat against the cream. Now-a-days butter is made in barrels. Barrels are mounted on wooden frames and are turned by means of handles. Inside in a barrel there are beaters which strike against the cream when the barrel is turned. Butter is made once or twice a week. Women usually turn the barrel. When the butter is made it is taken out with the hand. The butter-milk is usually give to pigs. Long ago butter was brought to the market in small wooden barrels called firkins. If a stranger came into a house while butter was being made he was asked to turn the barrel a few times. If he did not do this it was supposed that he had power to take away the butter. This custom was carried out on every day of the year. But especially on May day.
