Long ago the people of Ireland made "bullmilk" when the ordinary milk was scarce. It is seldom made now because the poorest farmers have one or two cows. The bullmilk was generally made about November, December and January.This is how I was told it was made. When the farmers got the oaten meal they put it into a large basin and covered it with cold spring water. They left it in a dairy or some other room for nine or ten days. Then the woman of the house got a strainer and strained the milk into five or six jugs. The people used this for porridge and sometimes for tea. The bullmilk is a very healthy drink and is stronger than ordinary milk.Some farmers feed their calves and pigs with it and this old man maintained that they thrived well on it.
