The way the cream was got from the milk is as follows:- When the milk was got from the cows it was put into shallow earthenware pans and left there for about twenty-four hours, until the cream came to the surface. Then the dairymaid would come with a kind of vessel called a skimmer She would then take the cream from the milk and she would put it into the churn. She would churn about twice a week.
