- (ar lean ón leathanach roimhe)in summer time when there is a good deal of butter to be made and worked by hand power in winter when the butter is scarce.In the morning and Evening the cows are milked and the milk is seperated into skim milk and cream. The cream is put into a white enamel bucket which is called a cream bucket to let it thicken and then thrown into what is called a "Cream tub." Then the Cream is let there for about five or six days in winter and for about two or three days in summer. Then it is put into the Churn and churned around and made into butter it is let make for about half an hour or more. It is then taken out with a timber "Scoop or Shovel; and put on what is called a "Butter worker." The salt is then put on it and in winter time when the butter is pale "butter Colouring" is mixed in with the salt. It is then weighed and made up in the required lumps.In olden times there were churns which had a staff in them. This staff worked the cream upwards and downwards till it was made into butter
