- (ar lean ón leathanach roimhe)First the milk is separated and the cream is taken from it. After a few days the cream is put into a barrel and churned and made into butter. Then the butter milk is taken out and the butter is washed and salted.
In this locality butter is scarcely ever made only for the people's own use, but about fifty years ago people made butter at home and sold it at the markets.
The people now send the milk to the creamery in Shanagolden which is supposed to be the best creamery in the south of Ireland.
Butter is made at the creamery and sold to the people and what is left is sent to England.- Bailitheoir
