    Summer. The horses are the best servants the farmer has. They plough and cut and reap his crops. The pigs are always kept in because they would run away. They are fed with meal, potatoes, and milk. When they are fattened he sells them to bacon factories. He keeps one or two for himself to kill. When they are about to kill a pig they put keen edge on their knives. They put the pig on a table and they hit him with a stroke of a sledge on the forehead then they cut his throat with a knive. Then they get a pan for his blood. They they get boiling water and they shave all the hair and the dirt off him with knives. Then they open him and take out all his intestines. Then they select all the best parts for the puddings. Then they (select the l) go to a stream to clean them. The women take porkstakes of the pig and then they get two stones of salt for the salting. They get a barrel and clean it out and make it fit for the meat. They cut up the pig and salt it and put into the barrel and they leave it there for six weeks. Then they take it out and they hang it up in the chimney for smoking. It is fit to be eaten when it comes out of the barrel.
