Then they select all the best parts for the puddings. Then they (select the l) go to a stream to clean them. The women take porkstakes of the pig and then they get two stones of salt for the salting. They get a barrel and clean it out and make it fit for the meat. They cut up the pig and salt it and put into the barrel and they leave it there for six weeks. Then they take it out and they hang it up in the chimney for smoking. It is fit to be eaten when it comes out of the barrel.
