“In my home butter is still made by my Mother.”
In my home butter is still made by my mother. The churn we use is not a big one: its length is thirteen inches. The length of the lid is nine inches and the legs are twelve and a half inches.
When the cows are milked the milk is put into large pans and left to rest for twenty four hours in the dairy. It is skimmed and the cream put into the butter barrel to be made into butter.
Inside the barrel there are four beaters and when the butter is made these beaters will not move.
On one side of the barrel there is a spigot and when the butter is made this spigot is taken out to allow the butter milk to flour.
This milk is very nourishing to drink and is often used for baking purposes.
When the butter is taken out is is put into a clean pan and washed three times: It is then salted and made fit for use.
