- Long ago people when churning used a high churn called a plunge churn.
With this churn they had a dash and joggler.
The dash was passed down through a hole in the centre of the lid and the joggler was inverted over the opening to keep the milk from splashing out during the churning.
When the cream was ready it was put into the churn and hot water and a pinch of salt because it was supposed to be luck.
The dash was moved up and down very quickly in winter and slowly in summer.
As soon as the butter was in grain the churn was "rocked" from side to side to "gather" the butter.
