- The way Colcannon is made is: first the potatoes are peeled, and the water is boiled in a clean pot. The potatoes are washed and put in along with some salt when the water is boiling. The lid is then put on, and when they are boiled the water is taken off them, and they are broken up fine with an article called a "pounder". It is made of wood.
There is new milk put on them then, and more salt if it is necessary.
