   dash churn is used, small lumps are seen on the dash and when a box churn is used, the cover has to be taken off to see if the butter has collected on top.
   The butter is then lifted out. It is put into a basin of cold water, and the buttermilk is washed out of it. Salt is then put in it to give it a nice taste. It is then made into pound and two pound rolls. Some of the butter is kept for the household, some is sold on the market, and more is sold in shops.
   The buttermilk is then taken out of the churn and put into a large crock. Some of it is given to the pigs, some of it is sold and more of it is used to wet flour when making bread or cakes.
