Boxty Bread was very common in olden times. They washed and peeled raw potatoes. Then they grated them into a crock and mixed flour with them. Then they flattened it out and cut it into squares. Then they put it on a pan to bake.
They used to put a cross on top of a soda-cake and sometimes they put a round hole in the middle of it. The reason why they put these marks on it was to prevent the crust from rising off the cake.
On Shrove Tuesday the old people used to make pancakes. They used to melt a piece of butter and dip the pancake in it before they ate it.
On Hallow Eve they used to make Colcannon. They washed and peeled raw potatoes and boiled them in water. When they were boiled they poured the water off them and mashed them Then they made a round hole in the middle of it and put in a large piece(leanann ar an chéad leathanach eile)- Bailitheoir
