    dash was put in to the churn with which to beat milk. The milk had to be at the right temperature that is about 60 or it couldnt be done successfully. In cold weather warm water was added, and in hot weather cold water.
    The (cur) churning them began and if the milk was at the proper temperature, it should be finished in an hour.
    Two people always helped at the churning each one beating on turn. When the butter was ready it was lifted, from the milk which was now buttermilk and placed in a wooden dish which had been scalded with boiling water, salt was then added to the butter and mixed with a clean knife which also removed any hair that might have escaped the strainer. The buttermilk was then washed from the butter with clean
