- (1) Fadge is the local name for potato-bread. It is made on the griddle or pan over the open turf fire.
(2) Oat cake is made in the pan or griddle. It used to be set up in front of the fire against a row of turf to dry thoroughly after baking.
(3) Herrings are grilled on the tongs laid over the hot coals.
(4) Dulse is held over the fire till it turns green. It is then eaten. This takes the salt taste out of it.
(5) Bairneach or barnacles are roasted in the coals.
(6) Pig's liver is preboiled and then fried in bacon gravy.
(7) Sowans is made from the seeds of oats crushed. They are boiled first in water, then strained. The husks are removed. It are then boiled with milk, and supped like porridge. After the second boiling it is quite stiff.
(8) Black puddings are made out of cow's blood and fat.
